RAW CHEESECAKE RECIPE

This takes some time to prepare, but I promise this is the best raw cheesecake recipe you’ve ever tasted!

CRUST
2 Cups raw nuts (almonds, pecans, walnuts or macadamia nuts)
½ Cup Dates (soaked and pitted)
Coconut

CHEESE
3 Cups Soaked Cashews (Soak a least an hour, but longer if possible)
¾ Cup Lemon Juice with pulp (or lime for more tartness)
¾ Cup Raw Agave Nectar (Honey can be used as a substitute)
¾ Cup Raw Coconut Oil (lightly melted- emerge container in hot water or place in dehydrator a few minutes)
¼” piece of vanilla bean (use only the scraped out seeds) (extract can work as a substitution if it is pure and doesn’t contain alcohol.)

TOPPING
Your favorite fruit - frozen and fresh. (My favorite is raspberries or mango.)

TO MAKE-
Sprinkle coconut on the bottom of a 8″ spring form pan (to avoid the crust sticking). Use a food processor to process nuts and dates to form a crust. Gently press the crust into the pan and smooth with a plastic scraper. Next, blend (in a high powered blender) all the “cheese” ingredients until smooth & creamy. Pour “cheese” evenly over crust and place in freezer. If you have bubbles gently tap pan on the counter. Next, prepare topping by blending a bag of frozen fruit until spreadable- not necessarily smooth. Add a little agave or some dates if not sweet enough. Pour topping over “cheese” after it has set up. Cover & return to freezer until frozen. Defrost in refrigerator an hour before serving. Garnish with fresh fruit.

Are you looking for some good raw food breakfast ideas? A raw foodie is a vegan. In addition, the food is not heated to over 116 degrees Fahrenheit to preserve all of the foods’ nutrients and enzymes. Sound interesting? This healthy food can also be tasty food.

Chocolate-Cacao Shakes
Ingredients You Will Need:
¼ cup dates, pitted
½ cup almonds
¼ vanilla bean
1 tablespoon liquid coconut oil
1 tablespoon raw cacao powder
1 ½ cups purified or filtered water

Blend all ingredients together at a high speed until smooth and enjoy. Serves two.

Opening Eyes Oatmeal
Ingredients You Will Need:
2 cups soaked and sprouted hulled whole oats
½ cup soaked raisins
½ cup soaked sunflower seeds
½ cup soaked almonds
2 sliced papayas
2 sliced bananas
Juice from one lemon and one orange
2 tablespoons grated lemon peel
Filtered water

Soak oats for 15 to 20 hours, changing the water once. Then, let the oats sprout for 24 hours. In separate bowls, soak the raisins, sunflower seeds and almonds overnight.

Drain and rinse the seeds. Drain the raisins. Chop the almonds into smaller pieces. In a bowl, mix everything together except the citrus. Add the juice and peel, mix and serve. Serves four.

Easy Cinnamon Bread
Ingredients You Will Need:
1 ½ cups soft wheat
½ cup dates
¼ cup raisins
½ teaspoon cinnamon

Sprout the wheat for one day.
Take the wheat and dates and blend them well in your food processor. Mix in the raisins and cinnamon. Form the mixture into two loaves. Turn your dehydrator on to 105 degrees. Place the loaves on a teflex sheet and place in dehydrator for five or six hours. Take out the teflex sheet. Turn the loaves over and dehydrate for an additional five to six hours to your taste. Makes two loaves

Avo/Apple Mash
Ingredients You Will Need:
4 apples
2 avocados
½ cup filtered water

Remove the avocado from the skin. Peel and core apples. Put the avocados, apples and water in a bowl and combine. You can process this or use a hand mixer. Serves 4
Tip: Add a splash of fresh orange juice for a different taste.
